Light and bright pink color. The nose opens on fresh citrus aromas as well as a nice spiciness. The mouth is showing a good balance between alcohol and acidity and the aromatics are coherent with the nose. Nice clean and rather long finish. Serving temperature : 12 - 14°c / 53 - 57°F.
Pure Cinsault - From 50 years old vines. Harvested by hand in October. In organic conversion since 2016. Classified AOC Côtes du Roussillon. South of France, Occitanie-Roussillon. Altitude 550-650 meters above sea level.
Immediate pressing for half of the grapes, and 6 hours maceration for the other part. Temperature controlled under 20°c. Alcoholic fermentation in stainless steel tank, with indigenous yeast only. Then the wine remains few weeks on the lees. Malolactic fermentation completed. Aged 6 months in tank.
